Steak Temperatures

The following can be a guide for "doneness" or steak temperature (F):
  • Rare: 120° – 125°
  • Medium Rare: 130° – 135°
  • Medium: 140° – 145°
  • Medium Well: 150° – 155°
  • Well Done: 160° – 165°
Rare has a cooked outer edge with a warm to cool red center.

Medium Rare has a little deeper cooked edge with a warm center.

Medium has a more blended cooked edge with a hot center, with a firmer texture.

Medium Well has a mostly brown center, and a firm texture.

Well Done has no red or pink color, is very firm and tends to be much drier.

Keep in mind that a lot of variables can impact how steaks are cooked, to include altitude and weather.
