- Rare: 120° – 125°
- Medium Rare: 130° – 135°
- Medium: 140° – 145°
- Medium Well: 150° – 155°
- Well Done: 160° – 165°
Medium Rare has a little deeper cooked edge with a warm center.
Medium has a more blended cooked edge with a hot center, with a firmer texture.
Medium Well has a mostly brown center, and a firm texture.
Well Done has no red or pink color, is very firm and tends to be much drier.
Keep in mind that a lot of variables can impact how steaks are cooked, to include altitude and weather.
